How to Make Flourless Chocolate Cake!

by Sean Croxton & Scott Kustes

I have a weakness.

And it goes by the name of chocolate!

Last month (I’m way behind), my main man Scott Kustes of Naked Food Cooking stopped by the UW Kitchen to show us how we can satisfy our chocolate cravings semi-healthy style with this flourless chocolate cake.

To be totally honest, I thought I was gonna hate this one since it had coffee in it. Coffee disgusts me. Yuck!

But I totally dug it!

It’s reeeeally simple with just a handful of ingredients. And it’s quite tasty, especially the ganache!

Scott put together the directions for you. Here they go!

Try it out and let us know how it turned out.

Stay tuned. Scott and I also made some delicious Pork Belly with Pineapple Salsa. I’ll get it edited and uploaded some time next week.

Out!

YO. I cannot WAIT to chocolate the bejeesus out of my kitchen. That looks so licious AND I have been trying to get away from flour and a workabke dessert has been a major sticking point. (My man is all about ‘real’ dessert.)

Sean and Naked Food Dude, I think I love you. Thank you!!

Here’s the world’s easiest gluten free desert.
    3 Min Chocolate Mousse.

Put 4 room temp eggs (important! make sure they are room temp) in a blender, pour in 12 oz of chocolate chips or your favorite chocolate bar chopped up. Whiz on high for 1 minute. Add 2 teaspoons vanilla a pinch of salt.
Turn on blender again and slowly pour 8oz of hot coffee into mixture as it whizzes away. After one minute your chocolate is melted and eggs slightly cooked!
Put in cups and stick in the freezer for 20 minutes. (cooling it down quickly helps keep it lighter and airier). You can then leave in freezer till ready to serve or move it to the fridge. It keeps for weeks in the freezer. Also a great make ahead dessert.
